grilled market fish with beluga lentils,
marinated spring vegetables and tonnato sauce
duck braised in rosé with green garlic soubise,
pea shoots and blood orange

brown butter and hazelnut cake with bittersweet chocolate,
champagne coral cherries and vanilla ice cream
